This purse friendly, easy to make, mouth-watering combination of tuna, vegetables and melted cheese is odds on to be a sure fire hit with all the family.

Coming up with midweek meals which are inexpensive, inventive, delicious and guaranteed to appease even the fussiest eaters in the family may sometimes seem like mission impossible. However, with a bit of imagination even the simplest combination of ingredients can result in a dish which not only looks attractive, but also one which has such a wonderful blend of flavours that it’s almost certain to become a firm favourite and make regular appearances at the dinner table.

One of the great things about savoury tuna wraps is that most enthusiastic cooks are likely to keep the ingredients required as basics in their kitchen cupboards. All of which makes this recipe perfect for people who, at the end of a hard day’s work, want something satisfyingly yummy, but don’t have the time, or energy, to conjure up a complicated cordon bleu masterpiece.

Ingredients for Savoury Tuna Wraps

  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 2 medium tomatoes de-seeded and chopped
  • 1 220g tin tuna, drained (leave a little oil to keep the tuna moist)
  • 1 cup of grated cheddar cheese, or any tasty cheese
  • 1 tsp dried oregano,
  • 1 tsp dried parsley
  • 1 tsp chilli powder
  • 1 tsp paprika,
  • 1 tsp Italian seasoning (spaghetti seasoning)
  • A dash of Tabasco sauce
  • 1 tbsp sunflower oil
  • 25g butter
  • Salt
  • Pepper
  • Pre cooked Tortillas (2 per person)
  • For two people

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Preparation for Savoury Tuna Wraps

  1. Gently heat the butter and oil in a frying pan till hot (it may spit a little at first, but once the ingredients are added, it settles down).
  2. Cook onions, pepper and tomato in the butter and oil over a low heat for 5-12 minutes until the onion is soft.
  3. Add the dried oregano, parsley, chili powder, paprika, Italian seasoning, salt & pepper to the mixture and mix well.
  4. Splash in the Tabasco sauce and stir again. The amount of Tabasco sauce and chilli powder used depends on individual tastes. The mixture should have a kick to it, but not enough to start a fire in the mouth.
  5. Break the tuna up with a fork and add it to the mixture.
  6. Continue to cook gently until the tuna is heated through - 3 to 4 minutes maximum. Any longer and the mixture could end up too dry.
  7. Divide the mixture into 4 and fill the centre of each tortilla. Roll up the tortilla into a pancake.
  8. Sprinkle the folded wraps with cheese and place under a hot grill until the cheese has just melted and starts to bubble.

Savoury Tuna Wraps are best served on a simple bed of lettuce which has been drizzled with a light salad dressing.
