A tasty recipe for meatloaf, featuring the tang of barbeque sauce, sweet apples and smoky gouda. This quick and easy meatloaf can be done in 90 minutes, start to finish.

For a different twist on an old-fashioned favorite, try this apple and gouda meatloaf recipe. This simple recipe makes meatloaf virtually foolproof and adds some new flavors to spice up this comfort food. The trick is in the barbeque sauce and the apple pie spice. This is a simple dinner that will make guests gush with praise.

Changing the baking pan makes this meatloaf look a little different than Mom’s meatloaf did, but it cuts the cooking time and assures that the meat cooks evenly and quickly.

This meatloaf recipe relies on great flavored ground chuck and subtly spicing to make it familiar and all new at the same time. Pair with mashed potatoes and a warm vegetable for a classic meatloaf dinner that would make Mom proud. For a winter dinner, it’s a comfort food updated for more modern taste buds and it is super simple. Anybody can make this meatloaf work.

Ingredients:

· 2 pounds 90 percent lean ground chuck

· 2 Granny Smith apples, peeled and cored

· ½ pound of gouda

· 2 teaspoons apple pie spice

· 1 teaspoon onion powder

· Sweet Baby Ray’s BBQ Sauce (or a favorite substitute)

· 2 eggs

· 8 slices of whole wheat bread for bread crumbs

Heat oven to 400 degrees. Place bread on cookie sheet and toast for about 10 minutes or until bread is well-toasted on both sides. Remove the crust to create more even bread crumbs. Cool and then crumble with hands or in a blender or food processors.

Grate gouda and apples and mix gently in large mixing bowl.

Add meat, eggs and bread crumbs. Mix thoroughly with hands to blend all ingredients. Add 2 Tablespoons barbecue sauce, onion powder and apple pie spice. Mix thoroughly, scraping the sides of the bowl to get all ingredients blended.

Spray a 9” x 9” x 2” square baking pan with cooking spray. Dump meat mixture into pan and spread evenly, being sure to press the mixture down and into corners. Spread 2-3 tablespoons of barbeque sauce over the top and place in over to bake, uncovered.

This spicy, barbeque meatloaf is slightly sweet and very filling. Cut the pan into nine pieces and have plenty of filling food for any meat lover and great leftovers for meatloaf sandwiches the next day.

The apples and cheese in the meatloaf recipe are subtle and simply enhance the natural flavor of the meat.

Bake at 300 degree for approximately 75 minutes or until done.
