Autumn is a great time for playing in the leaves and gathering in the fall harvest. Now is the time to think of warm soups and steaming hot chocolate. After a long day of working , this easy to make soup will warm your body and your soul. It is so easy to make and is very inexpensive. Most of the ingredients are already in your pantry. Now that autumn is here we are all looking for great recipes to keep handy for those cool evenings when we just need something warm and delicious in our tummies. Soups are the perfect choice. There is no better way to please your family than with a delicious warm and filling bowl of hearty soup. Even children love this soup and will gobble it right up. It is a real family pleaser. It is so simple to make. Preperation time: 20 min. Cooking time: 25 min. Ingredients: 1 lb ground hamburger or ground turkey 3-4 lbs of russet potatoes 1- 10 3/4oz can of tomato soup (condensed) 1 medium onion finely chopped 1 tsp. of salt ½ tsp. of pepper Parmesan Cheese Wash and peel the potatoes. If you have large potatoes cut them in half and slice very thinly, place in a bowl of cold water while cooking the hamburger. This keeps the potatoes from turning brown. Now crumble the hamburger in a 5qt. sauce pan. Brown the meat on medium high heat with the chopped onion. Add salt and pepper to the meat while it is cooking. When the meat is well done add the potatoes, the can of tomato soup and enough water to cover the potatoes. Stir well to dissolve the tomato soup. Bring to a boil and reduce heat to a simmer. Continue cooking for 25 minutes or until the potatoes are done. Sprinkle each bowl with parmesan cheese before serving. Serve with warm bread and salad for a completely balanced meal. Servers 4-6 people. Tips for keeping your potatoes tasting great: 1. Don't store your potatoes in the refrigerator or the freezer. This will cause the starch in your potatoes to turn to sugar and will change the flavor of them. 2. Keep your potatoes in a cool dark place, (preferred temperature is 40-50 degrees-F) 3. If your potatoes start to grow sprouts you may simply break these off and continue to use them. 4. You should not use potatoes that are soft , wrinkly or have any green-tinted skins. These are potatoes that are starting to go bad. 5.You should not wash your potatoes until you are ready to use them. If you do it may quicken their rate of spoiling. Tips for keeping meat safe and fresh: 1. Keep the temperature of your refrigerator set below 40 degrees F. Bacteria can start to grow at temperatures of 40 degrees and above. 2. When choosing meat (ground hamburger) remember you should choose meat that is low in fat and bright red in color. 3. Ground hamburger should not be kept in the refrigerator for more than two days after purchase. If you plan to use it later than two days please remember to freeze it. 4. Do not leave meat on the counter to thaw, place it in the refrigerator the night before. This will prevent bacteria from forming on it.
