For Thanksgiving or Christmas recipes, baked corn is the perfect side dish. Using canned, fresh or frozen corn, these recipes offer a classic recipe or cheese variation.

Baked corn makes a delightful dish for the holidays. While many families have a corn casserole filed under "Christmas recipes," baked corn is the perfect side dish for many family meals. These two variations offer a classic and smooth side, while the second offers cheesy flavor with the slight crunch of crushed Chex cereal.

Baked Corn Recipe With Canned Corn

  • 1 can of corn
  • 1 cup of milk (approximate)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 1/2 teaspoon pepper
  • 2 eggs, beaten

How to Make the Basic Corn Casserole

  1. Grease an 8" x 8" or 9" x 9" casserole dish.
  2. Preheat oven to 375 degrees.
  3. Drain corn and reserve liquid. Combine milk to the corn liquid to make 1 1/3 cups of liquid. Set aside.
  4. Melt butter in a small saucepan over medium heat.
  5. Slowly stir in flour, combining over the heat until smooth.
  6. Add sugar, pepper. and corn to the mixture.
  7. Slowly add in reserved liquid, stirring continually to create a smooth sauce.
  8. Remove from heat, add in corn.
  9. Stir in beaten eggs.
  10. Baked uncovered for 45 minutes, or until casserole has set and is golden brown on top.

Adaptations

As written this recipe serves 4 - 6. For larger gatherings, the recipe can be doubled and prepared in a 9 x 13" baking dish. Fresh or frozen corn may also be used, simply cut the milk with approximately half water to make 1 1/3 cups of liquid.

For an different twist on the classic baked corn recipe, the following one adds American cheese and Corn Chex Cereal. This recipe was made popular in the 1950's when General Mills would sponsor recipe contests.

Cheesy Baked Corn with Chex Cereal

  • 1/4 cup green pepper, chopped
  • 1/3 cup onion, finely chopped
  • 2 tablespoons butter
  • 3 eggs, large
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/8 teaspoon pepper
  • 1 cup shredded American cheese
  • 1 can corn, drained
  • 2 cups corn chex; coarsely broken

How to Make a Cheesy Corn Casserole

  1. Grease a 2 quart casserole dish.
  2. Preheat oven to 325 degrees.
  3. Saute the green pepper and onion in melted butter until the onion becomes slightly translucent.
  4. In a medium bowl, beat eggs. Add in milk, salt, sugar, and pepper, beating to combine.
  5. Stir in cheese, corn, sauteed peppers and onions, and 1 1/2 cups crushed cereal.
  6. Pour casserole mixture into prepared dish. Top with remaining 1/2 cup of cereal.
  7. Bake uncovered 45 minutes or until set and golden brown.
  8. Allow to cool a few minutes before serving.

Entertaining during the holidays can be a bit easier with these two meals that prepare quickly and need little attention while baking. Either of these baked corn versions is sure to go over well with both friends and family.
