Easy Way to Cook Fish on a Budget

Everyone says to eat your fish, yet the average budget of both time and money doesn't always allow fresh fish. Here's a way the whole family will enjoy fish for supper.

In the tradition of meatloaf, this salmon loaf can be enjoyed not only hot out of the oven for supper, but also at lunch straight from the fridge. It's tasty either way, and won't stay around for long. One only needs to buy a can of salmon or get it from the pantry; all the other ingredients are probably already on the shelves. It will be relished as is or can be varied at times for a change. The same mixture can also make salmon croquettes.

Cookware Needed

  • Glass or metal rectangular pan, 6 by 12 inches or similar size
  • Mixing bowl
  • Blender to make bread crumbs
  • 1 measuring cup

Ingredients for Salmon Loaf

  • 1 can of salmon, 1 pound or about 2 cups (or leftover cooked salmon from day before)
  • 1 cup bread crumbs (easy to make in blender)
  • 3/4 cup milk
  • 1 egg, slightly beaten
  • 1/4 cup onion, minced or chopped as desired
  • 2 tablespoons melted butter or like product
  • Salt and pepper to taste

Directions for Making Salmon Loaf

  1. Preheat oven to 350 degrees.
  2. Grease or spray loaf pan with oil.
  3. First, use a blender to make bread crumbs by tearing bread in strips or pieces about 2 inches long. Then put in blender on medium or high till it becomes crumbs. Stopping the motor to stir a bit helps blend it thoroughly. Then pour into cup measure.
  4. Drain salmon.
  5. Add milk, egg, bread crumbs, onion, melted butter, then salt and pepper.
  6. Toss with fork till fairly evenly mixed.
  7. Pour into loaf pan,.
  8. Form loaf with one hand on each side, patting till even height and width, rounding a bit on edges.
  9. Cook 50 to 60 minutes till done.

This salmon loaf serves 5 - 8 people but expect request for seconds.

Variations for Easy Salmon Loaf

  • For small family, fix 2-3 croquettes to eat for supper (cooking only 30 minutes or so till brownish) and make a smaller loaf with the rest for another day, or use to make salmon patties.
  • Cold leftover salmon loaf can be served as is with a salad or on sandwiches.
  • Add a half or whole chopped bell pepper.
  • Add a couple of tablespoons lemon juice either to mix in bowl or on top just before serving.
  • If a drier loaf is preferred, reduce liquid; if a more moist loaf is preferred, increase liquid.
  • Top lightly with nutmeg or allspice, or other spice of choice.

Serving Suggestions for this Fish Supper

Serve with salad and a favorite veggie.

Put tartar sauce on table, or on top of each serving.

Serve with homemade bread or rolls which can be cooked just before starting the loaf, or in another oven.
