An easy dinner recipe, this beef casserole is both kid friendly and easy to make. Combining noodles and a tangy tomato sauce, this easy casserole recipe is hearty.

Popular during colder weather, casseroles provide hearty and nutritious meals that require little technical skill. A good first-time cooking experience, this casserole requires basic chopping knowledge as well as the ability to saute, boil, and bake.

Beef raises this casserole from a side dish into a substantial meal. Containing many of the same ingredients as lasagna, families who love noodle dishes will enjoy the tangy tomato sauce of this beef casserole recipe. As with most casseroles, this one is topped with cheddar cheese. Using a strong aged sharp cheddar gives this recipe an extra kick. Or, use an Italian shredded cheese blend and serve with slices of garlic bread.

Easy Dinner Recipe That Makes a Quick Meal

The casserole can be put together in under 30 minutes and then baked for another 45 minutes. Time saving comes from preparing the casserole the night before, then baking the following evening for a quick meal. Reheated leftovers store well and can be used for a packed lunch the next day.

This easy to make casserole is more than a side dish. It's a meal. Loaded with ground beef and noodles, the savory tomato sauce is flavored with oregano, onions and green peppers. Kids will appreciate the cheese and noodles, while the whole family will be asking for a second helping.

Beef and Tomato Noodle Casserole

Serves 6-8

Ingredients:

  • 1 pound ground beef
  • 2 medium onions, chopped
  • 1 can tomato soup
  • 2 cups uncooked egg noodles
  • 1 green pepper, seeded and chopped
  • 2 cups water
  • 1 small can pitted green olives,chopped
  • 1 can whole kernel corn, drained
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 2 cups grated cheddar cheese

Directions:

  1. Preheat oven temperature to 350F (170C)
  2. Grease a 9 x 13 inch casserole dish with butter and set aside
  3. In a large skillet over medium heat, cook ground beef until browned.
  4. To the skillet, add the chopped onion, chopped green pepper, tomato soup, water and egg noodles.
  5. Bring the skillet to a boil, then reduce heat to a simmer. Continue simmering until noodles are nearly done. This should take about 15 minutes.
  6. Add chopped olives, drained corn, and oregano. Season with salt and pepper to taste.
  7. Pour into the prepared baking dish and sprinkle with grated cheddar cheese.
  8. Place into preheated oven and bake for 45 minutes.

The bubbly beef casserole combines many of the same ingredients as lasagna into an easy to make dinner. No layering noodles or other ingredients, this casserole recipe simplifies dinner preparation and makes it into a one pot meal. Baked until bubbling, the casserole is the perfect hearty meal for a cold night.
