Ingredients

  • ½ pound of lean, fresh ground beef
  • ½ medium red bell pepper, diced
  • 1 medium yellow summer squash, diced or thinly sliced and quartered
  • 1 cup fresh, prewashed baby spinach leaves
  • 1-3 teaspoons minced garlic
  • 1 teaspoon Italian seasoning (such as 5th Season Italian Seasoning)
  • Salt and pepper to taste
  • ¼-½ cup of shredded cheese (cheddar, Mexican blend, or mozzarella)

Directions

  1. Place the ground beef in a large nonstick frying pan over medium-high heat, stirring it to break it up.
  2. Stir in the diced red peppers, and cook for 2-3 minutes, stirring occasionally.
  3. Stir in the summer squash, and cook for 5 minutes, stirring occasionally.
  4. If lower-fat content is desired (or if higher-fat content ground beef was used), drain and/or blot the meat mixture at this point, and then return it to the frying pan.
  5. Add spinach, garlic, and seasonings. Cook, stirring, until the spinach has wilted and blended into the meat mixture.
  6. Place half of the mixture into each of the serving dishes, and then top it with shredded cheese (cheddar, Mexican blend, or mozzarella) to taste.
