Chicken in Spicy Cream Sauce with Noodles

For years chicken a la king has been a staple of the American dinner table. Quick and easy to prepare, it gives you a hot meal in no time. Now it's getting a makeover.

Everyone is busy these days. You have too much to do during the week to be able to prepare hot nutritious meals for yourself and your family. Chicken a la king is one of those forgiving dishes that uses your leftover chicken or turkey without it tasting like you're eating leftovers.

Spicy Chicken a la King can be made in under 1/2 an hour if you use leftover or pre-cooked chicken. Even if you use fresh chicken, using chicken tenders will only add about 7 min to your cooking time. If you are like most of us and have the mound of leftover turkey to deal with after a holiday meal, this recipe not only gives you a tasty alternative to days of turkey sandwiches it will give you a dinner that doesn't have you cooking all day.

This recipe calls for it to be served over noodles but is equally delicious served over toast points. If you are planning a brunch a very elegant way to serve this dish is to bake puff pastry cups; you can find these in the freezer section of your local grocery. Simply bake the pastry cups, remove part of the dough in the middle and spoon the chicken over the top of the cups.

Ingredients:

  • One boneless skinless chicken or One leftover cooked chicken or turkey
  • 1/2 tsp garlic powder
  • 3/4 tsp seasonall
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/2 c chopped onion
  • 1 small can chopped green chilis
  • 1/3 c chopped red bell pepper
  • 3/4 tsp dried oregano or 3/4 tbsp fresh oregano
  • 1 can cream of chicken with herbs soup (condensed)
  • 1/2 c sour cream
  • 1/8 c evaporated milk (you can sub half and half for evaporated milk)
  • 8 oz pkg wide egg noodles

Cooking Instructions:

  1. Cut chicken or turkey into bite size pieces
  2. Bring water to boil in a large pan, cook noodles following directions on package
  3. In a separate frying pan place olive oil and chicken and heat over medium high heat
  4. Sprinkle chicken with garlic, seasonall and black pepper
  5. Cook raw chicken over med high heat for 7min stirring occasionally , if using pre-cooked meat heat stirring constantly for 4 min until heated through
  6. Add onion and red bell pepper sauteing for 2 min
  7. Pour in green chilis and evaporated milk continue to cook to allow to thicken slightly, about 2 more min
  8. Sprinkle oregano over chicken and stir
  9. Reduce heat to med low
  10. Add condensed soup and sour cream stirring well
  11. Allow chicken to simmer for 5 min
  12. Meanwhile drain noodles, pour them back into the pan they were boiled in and add 3 tbsp butter or 1 tbsp olive oil to noodles and stir well to keep them from sticking

Serving Suggestion:

  • Put noodles in a large casserole dish or on a serving platter
  • Pour chicken over top of noodles
  • If you would like to add extra 'heat' to your chicken you can lightly dust with crushed red pepper or ground cayenne

Buttered toasted Texas toast (thick sliced white bread) is an amazing accompaniment to this dish and can be found in the freezer section of most grocery stores. If you can't find Texas toast, buttered toasted French bread is equally delicious.

When served with a tossed green salad, you have a whole balanced meal ready to serve in about half an hour
