Crock Pot Chicken with Sweet Potatoes and Rice

The Perfect Recipe to Keep the Family Warm this Winter

The crock pot is a fantastic way to make a comforting and delicious meal with little effort.

School is in session and that means juggling carpools, grocery shopping and helping with homework as well as cooler temperatures. Now is not the time to order takeout for dinner! When using a slow cooker, meats melt in your mouth, veggies release their liquids adding wonderful flavor to any sauce thrown in, and who doesn't love being able to drop all of the ingredients in a pot and walk away? The aromas of a crock pot meal will greet a chilled family at the door after a long winter day, and warm their hearts before the first bite.

Crock Pot Chicken with Sweet Potatoes and Rice

Ingredients

  • 4-5 skinless boneless chicken breasts
  • 2 12-16 oz cans of cream of chicken soup
  • 1 large sweet potato
  • 6 medium size carrots, peeled and cut into chunks
  • 1 large onion cut into chunks
  • 1/2 cup of rice
  • 1/2 cup of chicken broth
  • Salt and pepper to taste

Directions

  1. Cut the potatoes into bite size chunks keeping them a bit on the larger side. Cover the bottom of the crock pot with the potatoes, then cover with the carrots, finishing with the onions. Sprinkle all of the vegetables with salt and pepper. Pour enough cream of chicken soup over to cover, adding half the amount of chicken broth.
  2. Sprinkle the skinless boneless chicken breasts with salt and pepper and layer over the vegetable mixture. Cover with the remaining cream of chicken and broth and place the lid on the crock pot.
  3. If time is an issue, set the crock pot on high and leave it for about four hours. Otherwise, setting the crock pot on low will take about eight hours before the chicken falls apart and the vegetables are tender. The soup should be bubbling when it's ready. Either way, pull out one of the chicken breasts to make sure it's cooked through, there shouldn't be any pink showing when inserting a knife.

As with any recipe, substitutions are always welcome. Swap out the cream of chicken soup for cream of mushroom, or use reduced fat if cooking a lighter meal. If sweet potatoes and carrots don't appeal, use regular baking potatoes.

Use a larger crock pot for this recipe but a smaller model will work, so feel free to cut this recipe in half. Keep this one in the recipe box and for some variety, use pork chops or turkey breasts instead of chicken. Slow cooker meals are so versatile, the possibilities are endless.
