This easy-to-prepare chicken dish combines sweet-and-savory Asian influences with citrus and spices from the Caribbean.

For cooks who have not tried Asian fusion cooking, curry peach chicken is a simple yet delicious starting point. The marinade for this recipe can be prepared in less than ten minutes using ingredients found at mainstream supermarkets, yet ends in a dish that is robust and flavorful.

The peach preserves in this recipe give the chicken a sweet flavor, while the Jamaican curry, crushed red pepper, and fresh ginger root add spicy complexity to this dish.

Served with pasta or rice and a side of steamed green vegetables, curry peach chicken makes a filling main course. When the chicken is skewered before baking, this dish also makes an easy yet impressive appetizer for parties, barbecues, or family meals.

Curry Peach Chicken Recipe

Ingredients:

  • 1 pound boneless skinless chicken breasts
  • 3/4 cup peach preserves
  • 3 teaspoons Jamaican curry powder
  • 2 teaspoons fresh ginger root, minced
  • 2 Key limes or Persian limes, juiced
  • 1/2 teaspoon crushed red pepper (or to taste)
  • 1 tablespoon soy sauce
  • 1/2 cup water

Directions:

  1. Preheat oven to 375F.
  2. Wash, peel, and mince fresh ginger root.
  3. Combine peach preserves, Jamaican curry powder, fresh minced ginger, lime juice, crushed red pepper, and soy sauce in medium bowl.
  4. Add water to preserve and spice mixture and stir until ingredients are well blended.
  5. Place chicken breasts in a shallow baking pan.
  6. Spoon peach curry marinade over chicken.
  7. Bake uncovered for 1 hour, basting chicken with peach curry mixture 3-4 times during cooking.

Serves 3-4

Simple Chicken Appetizer

Extra Item Needed:

  • Bamboo skewers

Directions:

  1. Soak bamboo skewers in water for 30 minutes.
  2. Cut boneless skinless chicken breasts into strips, lengthwise.
  3. Insert skewer into chicken, leaving 2-3 inches of skewer sticking out, cutting the skewer if necessary.
  4. Place skewered chicken in the bottom of basting dish, cover with peach curry mixture, and cook per regular recipe instructions.

Serves 4-6

Easy Meal Serving Suggestion

Serve the curried peach chicken breasts over al dente angel hair pasta or steamed jasmine rice. To make a complete meal serve the curried chicken breasts with steamed broccoli or asparagus tips. As the vegetables cook, squeeze the juice of 2-3 key limes over them and continue to steam until tender. Add a small dash of crushed red pepper to the cooked vegetables for added zest.

Variations

Cooks may also want to experiment with other sweet marinade bases, trying other varieties of fruit preserves to match their personal tastes. Consider substituting orange marmalade, apricot jam, plum, or lemon jelly for the peach preserves when preparing the marinade. Many fruit flavors compliment the curry and citrus notes in this Asian-fusion dish.
