Italian-Style Meatloaf and Meatloaf Bruschetta Sandwiches

What I think makes a good meatloaf is the juice. A juicy meatloaf helps the flavors ruminate. This Italian-style meatloaf uses diced tomatoes as the juice base to steam the Italian flavors together for a great hearty dinner. And the addition of Mozzarella cheese rounds out the wonderful flavors.

Italian Style Meatloaf

Ingredients

Mix together first five ingredients. Add beef until mixed through. Then blend in remaining ingredients. Form into loaf and place in baking dish. Bake about 1 hour at 350°F (175°C). Pour off fat and slice. Serve with potatoes or pasta.

Meatloaf Bruschetta Sandwiches

Ingredients

Mix chopped onion, basil, tomato, 2 tablespoons olive oil and garlic salt in bowl and let flavors blend. Split the loaf of bread, brush with remaining olive oil and lightly toast on baking sheet. When bread is toasted, remove from oven, and rub with peeled garlic clove. Slice bread into meatloaf slice-sized pieces. Place meatloaf on toasted French bread, top with Mozzarella cheese and bruschetta topping. Enjoy as an open-faced sandwich. Serve with a side salad.
