With today's busy schedules it is hard to find time to cook recipes that are quick and healthy. With this chicken dish, both are accomplished with a delicious result.

Chicken is very versatile and while many may say that it is boring, there are countless ways to cook it that take it from blah to spectacular.

Choosing the right ingredients for a recipe are what make it work, but they don't have to be complex or intricate. Oftentimes, simple and healthy items can make a dish both good and good for one's health.

Red and Green Peppers are Very Abundant in Nutrients

Green peppers are low in fat and calories, plus they offer a good source of fiber. They have no cholesterol or fat and are very low in sodium. Green peppers also contain a nice variety of minerals and vitamins, especially vitamin C.

Red peppers are similar to green, but they pack an even better punch. A little higher in calories and sugar than green, they still come up on top with a hefty amount if vitamin A and an even higher content of vitamin C. Plus, red peppers also contain a nice amount if vitamin B12, folate and vitamin E.

Both green and red peppers taste excellent when stewed or stir fried. With this recipe they are cooked together with the chicken, so their flavor enhances the whole dish. Also, since the peppers are left cooking in with the chicken's juices, they come out very soft and buttery, even though not an ounce of butter is used.

This chicken recipe is very easy to prepare and consists of a minimal ingredient list. It is quick to make and tastes so great the whole family will love it.

Ingredients for the Easy and Healthy Chicken Recipe

  • 1 pound of boneless chicken (thigh or breast works great)
  • 1 bag of frozen red pepper, green pepper and onion mix
  • About 1 teaspoon of seasoning salt (depending on taste)
  • 1 tablespoon dried parsley
  • Pinch of black pepper (to taste)
  • 2 teaspoons of Herbes de Provence

Preparation for the Easy and Healthy Chicken Recipe

  1. Drizzle a large pan with some olive oil and place it on the stove. Turn the heat on to about 6, or medium setting.
  2. Cut up the chicken to bite size pieces, taking care to cut away any fat. Put the chicken pieces into the pan so they start to cook.
  3. When the chicken begins to turn white empty the bag of frozen peppers and onions onto the pan. Sprinkle the seasoning salt, dried parsley, black pepper and herbs onto the chicken and peppers.
  4. Mix the chicken and peppers thoroughly making sure the chicken is cooking well and the peppers are thawing.
  5. Once the peppers are softened and the chicken is thoroughly cooked, lower heat to a simmer and cover the pan.
  6. Let chicken and peppers simmer for about 5 or 6 minutes. Then, remove from heat.

- Serves about 4 people

This dish can be served with home-made mashed potatoes, or in keeping with a healthier trend, it is excellent with brown rice.
