A busy weekday calls for an easy nighttime meal. By combining few ingredients, these tasty beef enchiladas are on the table in no time.

Using just a few ingredients probably already in the pantry, this recipe for beef enchiladas comes together quickly.
Ingredients
1 1b. ground beef
½ cup chopped onion
1 package taco seasoning
1 can (16 oz) refried beans
½ cup jarred salsa
2 cups Mexican-blend shredded cheese
1 can (10 oz) enchilada sauce
12 corn tortillas
Directions
Preheat oven to 350°.
Spray a 9 x 13 baking dish lightly with cooking spray.
Cook chopped onions and ground beef in a large skillet.
Add taco seasoning, refried beans, salsa and about ½ cup shredded cheese. Mix well.
Pour a small amount of enchilada sauce onto a rimmed plate or baking sheet.
Dip a corn tortilla into the sauce. Spread a spoonful of the meat and bean mixture onto the tortilla.
Roll up and place in a 9 x 13 baking dish.
Continue with the remaining tortillas adding more sauce as you go.
When all tortillas are filled and rolled, pour remaining enchilada sauce over the enchiladas.
Bake for 20 minutes.
Remove dish from oven and top with remaining shredded cheese.
Continue baking until cheese is melting or about 10 minutes.
Tips for Preparing Enchiladas
For added flavor to the filling, stir in bell peppers, jalapenos, extra salsa, corn or garlic.
Corn tortillas tend to break when rolled, which is okay. For neater enchiladas, first fry them in a little oil to soften before dipping them in the sauce.
For a different taste, replace the ground beef with chicken or black beans.
