Broiled Salmon Steaks With Herbed Sauce
Ingredients:
6 salmon steaks (about 2 pounds of salmon) ¼ cup butter or margarine ¼ cup dry white wine 1 tbsp chopped fresh parsley, or 1 tsp dry ½ tsp herb blend mix such as Italian or Herbs de Provence ½ tsp chopped garlic 1 tsp salt ¼ to ½ tsp freshly ground pepper Directions:
Combine butter or margarine, wine, parsley, herbs and garlic in a sauce pan Heat slowly until butter is melted, turn off heat and stand for 15 to 20 minutes Sprinkle steaks with salt Place fish on broiler pan sprayed with cooking oil, about 3 inches from heat source Brush with sauce and broil for 4 to 6 minutes, basting several times Carefully turn the fish and again baste with sauce several times Broil 4 to 6 minutes longer or until fish flakes easily when tested with fork Serve fish with fresh lemon wedges Serves 6 people
Baked Salmon Rolls with Cheese Sauce
Ingredients:
6 salmon fillets 3 tbsps butter or margarine 3 tbsps flour 1 ½ cups light cream 1 cup grated cheddar cheese 1 tbsp sweet sherry 1 ½ tsps salt ¾ cup finely chopped onion 1 ½ tbsp lemon juice ½ tsp white pepper ¼ cup melted butter or margarine Directions:
Melt the 3 tbsps of butter in a saucepan Add flour and stir until smooth Gradually add cream, stirring until in starts to bubble Cook over low heat about 5 minutes Add the cheese, sherry and ½ tsp salt and heat until cheese is melted Remove from heat Roll up salmon, and fasten securely with toothpicks Arrange salmon in a oiled baking dish. Sprinkle with the diced onions, lemon juice, pepper, and the remaining salt Pour the ¼ cup melted butter over top Bake in 400 F oven for 35 minutes, or until fish flakes easily with fork Pour the cheese sauce over the fish and brown in broiler around 4 inches from heat source Baked Salmon With Fresh Vegetable s
Ingredients:
2 pounds salmon steaks 1 cup thinly sliced onion 1 ½ cups chopped fresh mushrooms ½ cup chopped tomato ½ cup chopped green pepper ¼ cup chopped fresh parsley or 1 to 2 tbsps dried 3 tbsps chopped pimento ½ cup dry white wine 2 tbsps lemon juice 1 tsp salt ¼ tsp dried dill weed, or ½ tsp fresh ¼ to ½ tsp pepper lemon wedges Directions:
Cut salmon steaks into serving size pieces and place in well oiled large baking dish Spread cut-up vegetables on top of fish Combine wine, lemon juice and seasonings and pour over vegetables Bake at 350 F for 25 to 30 minutes or until fish flakes easily when tested with a fork Serve with lemon wedges If you enjoy the taste of salmon, check out these recipes for smoked salmon , or the best salmon soufflé .
