Summertime and the cookin’ is easy . . . At least when you’re grilling it is. Brush mayonnaise lightly over salmon filets. Sprinkle with dill, garlic, salt and pepper. Place on a grill that’s been preheated to 350 degrees. Grill about 10 minutes, turning once and being careful not to overcook salmon. (Large filets may take a little longer.) Serve with dill sauce, made with equal parts mayonnaise and sour cream, and as much dill weed as you like. New Potatoes and Green Beans
Put all ingredients into a 10x15 metal baking pan. Toss to ensure that all potatoes and beans are covered with oil. Place the pan on the grill and cook with the lid closed until potatoes and beans are soft, about 20-30 minutes. Stir occasionally while cooking. Grilled Pineapple RingsMix together ½ cup orange juice and 3 tablespoons maple syrup. Whisk to blend. Put pineapple rings from a can in a shallow dish and pour orange juice mixture over. Marinate for at least an hour. Place on 350 degree grill and cook about 2 minutes per side. Serve with vanilla ice cream. For more seafood recipes, see:
