This easy curry recipe is not too hot and versatile enough to satisfy a family. Double the recipe and freeze leftover beef curry or switch out ingredients as required.

This easy ground beef curry is delicious, versatile and can also be used with ground turkey, ground pork or other ground meats. For a chunky curry, used cut-up pieces of chicken instead.

Ingredients for Easy Ground Beef Curry:

  • 1 medium onion
  • 3 sticks celery
  • 2 carrots
  • 1 green pepper
  • 2 bunches green onions
  • 1 cup tomato sauce
  • 1 lb ground beef or other ground meat
  • 2 1/2 cups water
  • 1/3 cup milk
  • 2 tablespoons corn starch
  • 1 teaspoon ginger
  • 1 tablespoon curry powder
  • Salt and pepper, to taste

Method for cooking Easy Ground Beef Curry

  1. Chop up the onion.
  2. Set a skillet on the stove and start browning the ground beef.
  3. While the ground beef is cooking, wash and peel the celery, green onions, green pepper and carrots, then dice them.
  4. When the ground beef is done and no pink remains, drain the excess fat.
  5. Add the water and spices. Blend fully.
  6. Add the vegetables.
  7. Sprinkle with salt and pepper.
  8. Stir in tomato sauce, milk and corn starch. Mix thoroughly.
  9. Bring curry mixture to boil.
  10. Reduce heat and simmer for 30 minutes. Stir roughly every 10 minutes. If the curry is starting to dry out, add another 1/4-1/2 cup water.

The recipe is done when the vegetables are tender or al dente, as the cook prefers, and the sauce starts to thicken and look glossy. The curry has more of an Asian feel to it than Indian, and is mild enough for most who have at least minor spice tolerance.

How to Serve Easy Ground Beef Curry

This recipe serves four and can easily be doubled to feed larger families or create left-overs for freezing.

Serve with rice and naan bread, or spoon on top of a baked potato for a truly filling meal. Fresh, crispy bread is delicious dipped in the curry sauce. Try using pasta instead of rice for an interesting alternative. Pasta shells, spaghetti and fettucine work especially well.

While the recipe works with the vegetables listed, any of them can be substituted or removed, depending on what is in the kitchen at the time. Yellow and red peppers add a sweeter flavor; garlic may be added for extra tang, and extra curry powder for a hotter curry. For softer vegetables, cook for 40-45 minutes instead of 30.

The easy ground beef curry recipe takes about an hour to create from beginning to end, including preparation time.
