Slow cook this tasty vegetable beef soup for a one-dish meal that is hardy and tasty. Add a crisp salad and crusty rolls for a easy dinner or satisfying lunch.

Soup has been a mainstay in America's diet since early days when homemakers looked for ways to stretch their food supply, use leftover vegetables from their gardens, and provide hearty and warming meals for family and friends.

About 130 years ago a young chemist named John T. Dorrance discovered the process of condensing soup. He laid the foundation for Campbell Soup Company, according to the company's website, and soup for lunch became a tradition.

Many families, however, still enjoy the aroma of a pot of homemade soup simmering in the kitchen. Busy families often choose to slow cook their soups while enjoying family activities, hobbies and chores.

This slow cooked vegetable beef soup is easy to assemble and fits in with American's busy lifestyle.

Easy Crock Pot Vegetable Beef Soup

Ingredients:

  • 1 1/2 pound chuck roast, such as shoulder
  • 3 envelopes Beefy Onion Soup mix
  • 1 15 ounce can diced tomatoes
  • 1 16 ounce container beef stock or beef broth
  • 1 15 ounce can pinto beans
  • 2 cups frozen mixed vegetables or more if desired

Directions:

  1. If desired, place slow cooker liner in crock pot
  2. Cut meat in 4 to 6 pieces
  3. Place meat, beefy onion soup mix, tomatoes and stock in pot
  4. Cook on low for approximately 6 hours or until beef is tender
  5. Remove meat and shred or cut into desired size pieces and place back in container
  6. Add frozen vegetables and beans.
  7. Cook another 2-3 hours until vegetables are tender.

Recipe Variations for Hearty Vegetable Beef Soup

Leftover pot roast is perfect for this soup and makes it quick and simple to prepare. Cooking a larger roast than will be consumed at one meal will provide leftovers that can be frozen and defrosted when needed for beefy vegetable soup..

The soup can be prepared on the stove. Combine meat, soup mix, stock and tomatoes and cook on low. Cooking time for the meat will be about 2 hours. When the meat is tender, remove from pot and cut into desired size pieces or shred, depending on personal preference. Add frozen vegetables and beans and cook another hour. More liquid can be added if desired.

If leaving the crock pot on during the day is not an option, the meat can be cooked overnight and refrigerated the next morning. The vegetables can be pre-cooked and the ingredients assembled and simmered to blend the flavors. This can either be done on the stove top or for several hours in the slow cooker.

The amount of meat, vegetables and liquid ingredients can be adjusted to suit family preferences and cooking method.

Serving Suggestions for Vegetable Beef Soup

The soup makes a satisfying lunch when served with a grilled cheese sandwich. It is equally good for dinner, paired with a crisp green salad, crusty French bread, and a slice of homemade apple pie topped with ice cream.
