Whoever said oil and vinegar don’t mix? When you taste this easy recipe, you won’t want to separate them. The two ingredients, as well as the chicken, rice, fresh cucumbers and spices in this dish, have many health benefits.

When it comes to this recipe, use your favorite variety of oil whether it’s gourmet olive oils, virgin or extra virgin olive oils, or Spanish or Italian olive oils.

As for vinegar, the generic distilled variety works great. However, for a special treat, give rice vinegar a try.

Lemon Chicken, Green Rice & Cucumbers in Sour Cream

This recipe serves 4 – 6 people. It’s super easy and can be made a day or more before you serve it. The savory dish is not only delicious, it’s one of the best healthy recipes you can make for your family or friends.

Lemon Chicken Ingredients

  • 1 cup olive oil (your choice of gourmet, virgin, Spanish or Italian)
  • 1/2 cup lemon juice
  • 2 tbsp. dried oregano (fresh or dried)
  • 3 cloves minced garlic
  • salt to taste
  • freshly ground pepper corns to taste
  • 4 to 6 halved chicken breasts (with skin and bone)

Directions:

  1. Mix ingredients and pour over chicken, which should be skin-side down. It's a good idea to let them marinate overnight.
  2. Bake skin-side down at 350 degrees for 2 hours.
  3. You can broil them skin-side up during last few minutes (works best to turn them skin-side up during last half hour of baking).

Green Rice Ingredients

  • 2 cups white rice, uncooked
  • 2/3 cup olive oil
  • 4-6 tbsp. lemon juice
  • 2 tbsp. chopped chives (fresh or dried)
  • 2 tbsp. chopped parsley (fresh or dried)
  • 2 tbsp. chopped basil (fresh or dried)
  • 2 tbsp. chopped marjoram (fresh or dried)
  • salt to taste
  • Freshly ground pepper corns to taste

Directions:

  1. Cook the rice (Minute Rice works great).
  2. Pour oil and spices over rice and mix.

Fresh Cucumbers in Sour Cream Ingredients

  • 6 medium cucumbers pealed and cut thin (tip: salad shooters will make your work quick and easy)
  • 3/4 cup sour cream
  • 2 tbsp. generic white vinegar or rice vinegar
  • 1 tbsp. chives (fresh or dried)
  • salt and freshly ground pepper to taste

Mix and chill

The healthy chicken breast recipe with its rice and fresh cucumber side dishes is a perfect dish that can be served throughout the year.
