Fajitas - spicy vegetables with meat or fish wrapped up in soft flour tortillas - make for a quick and easy dinner, and are great fun to eat.
This recipe works particularly well with either prawns or chicken, as detailed below, but you could really use any kind of meat that you like. It is also delicious as a vegetarian dish - simply omit the prawns / chicken and add extra vegetables such a thinly sliced carrots. Serves four.
Ingredients
Three large skinless, boneless uncooked chicken breasts OR 300g large prawns (you can use either raw or ready-cooked ones)
Two large red peppers
Two large onions
Large handful mushrooms
One large mild red chilli
One desertspoon cajun seasoning
Pinch of cayenne pepper
One desertspoon vegetable oil
Eight large flour tortillas
Soured cream, to serve
Salsa, to serve
Method
Peel the onions, cut each in half and then slice lengthways to produce long thin strips. Deseed the peppers and slice them into similarly sized pieces.
Heat the oil in a large frying pan, add the onions and peppers and begin to fry them gently, ensuring that they don't burn.
Meanwhile, if using chicken, slice the breasts into long thin strips and add to the pan with the vegetables, turning the pieces regularly so that they brown evenly. If using prawns, they won't need to go into the pan until later.
Add the cajun seasoning and cayenne pepper to the pan and give evrything a good stir so that the contents of the pan is coated in the spices. Deseed and thinly slice the chilli and add to the pan along with a little cold water.
Cook for around ten minutes until the vegetables are softening and the chicken is almost cooked. Thinly slice the mushrooms, add to the pan, and cook for a further five minutes. If using grey uncooked prawns, add them with the mushrooms - they will go pink when they are cooked. If using ready cooked prawns, these only need to go into the pan a couple of minutes before you dish up so they can warm through.
When everything is cooked, check the seasoning and adjust if necessary. You can also quickly warm the tortillas in the microwave if you have one.
When you are ready to serve, take the pan to the table and allow your guests to construct their own fajitas, along with soured cream and salsa.
NB: if you have some cooked chicken to use up, then slice thinly and add to the pan at the same stage as you would the cooked prawns. This recipe makes quite spicy fajitas - feel free to leave out the chilli and/ or the cayenne pepper if you prefer.
