Cioppino Recipe

Serves 6

Ingredients:

  • 1 large sliced onion
  • 1 bunch sliced green onions (kitchen scissors work well)
  • 2 large cloves garlic
  • 1 seeded green pepper, sliced
  • 1/3 cup olive oil
  • 1/3 cup chopped parsley
  • 1 cup (1 lb.) tomato puree
  • 1 cup (8 oz.) tomato sauce
  • 1 cup white wine
  • 1 cup water
  • ½ bay leaf
  • 3 teaspoons salt
  • ¼ teaspoon pepper
  • 1/8 teaspoon rosemary
  • 1/8 teaspoon thyme
  • 2 medium-sized crabs, 1 dozen fresh clams or mussels in shells, 1 lb. peeled and deveined prawns or large shrimp
  • Additional seafood, whitefish and shellfish may be added to the chowder recipe based upon individual taste. Prepare fish by cutting into bite-sized chunks.

Chowder Recipe Directions

  1. Sauté onion, green onion, green pepper and garlic in olive oil for five minutes in large pot. Add parsley, tomato puree, tomato sauce, wine, water and all seasonings to pot. Cover and simmer chowder recipe for one hour.
  2. Clean and prepare seafood for the soup by scrubbing clams, cracking crabs and rinsing shrimp and fish. Add seafood to catch of the day recipe base already on stove, cover and continue to simmer until mussel or clam shells open, about 20 minutes. Discard any unopened clam shells before serving the Cioppino to guests.

Serving Seafood Soup: Presentation and Pairings
