For years people have been raving about the traditional green bean casserole with dried onions on top that seems to make its way onto every holiday dinner table. It’s time to mix things up a little bit and try a new green bean recipe that’s fast, easy, fresh and incredibly delicious. By using plain ingredients in a simple recipe you come up with an incredible green bean dish which just may replace the old standard green bean casserole once your friends and family try it. And, as an added bonus, this healthy side dish is very easy to make and takes less than fifteen minutes to prepare and cook.
You can either buy roasted almonds or roast them yourself. If you’re going to roast them, place them on an ungreased cookie sheet or baking pan and put them in the oven on 350 degrees for about 10 minutes, stirring them a couple times. Bring a large pot of water to boil and add the green beans, cooking until tender or about four to six minutes. While your green beans are boiling you can combine the olive oil, almonds and cranberries or craisins in a large bowl, tossing just enough to coat with olive oil. Once the green beans are cooked properly, drain them and dry them on a paper towel, then put them in the large bowl with the nuts and cranberries and toss once more with salt and pepper to mix the ingredients. Serve this fantastic fresh green bean dish to your guests at room temperature or warm. For a little variation, try using roasted pecans, pine nuts, sunflower seeds or any other nuts you prefer, you could even use a combination of several different kinds of nuts for added flavor. This side dish goes great with a thanksgiving meal as the touch of dried cranberries or craisins plays well with cranberry stuffing or a traditional cranberry dish. This easy green bean dish with nuts and cranberries is meant to serve about eight people, adjust the recipe as necessary to accommodate your dinner guests. It’s also the perfect dish to bring to a potluck as it’s just as delicious when it’s served at room temperature as it is when it’s warmer, so there’s no need to cook it somewhere else or try to keep it hot while you’re traveling.
