Lime Marinated Fish Fillets and Fish Tacos

Try this delicious and easy grilled mahi mahi recipe. Use the leftovers to make fabulous, fresh fish tacos.

Though their technical name is actually Dorado, a version of the word dolphin, Mahi Mahi fish are not related to the fun fish friends we know as dolphins. While they are a beautiful fish, they are mostly known for their widespread popularity as a delicious flaky, easy to make whitefish that is available for purchase year-round in most areas.

Mahi Mahi work great served as fillets, and with increasing popularity, as the main ingredient in fish tacos. Below you will find recipes for both – one using the leftovers from the other. Enjoy both this week, and make Mahi Mahi a new regular around your house.

Meal 1: Grilled Mahi Mahi

Ingredients

  • 1/4 cup fresh lime juice (2 to 3 limes)
  • 3 tbsp olive oil
  • 1 clove garlic, finely chopped
  • 1 tsp Dijon-style mustard
  • 1 tsp parsley
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 6 Mahi Mahi steaks (about 1-inch thick)

Preheat grill to medium high heat. Season fish with salt and pepper. In a small bowl, whisk together the lime juice, olive oil, garlic, parsley and mustard. Marinate fish in one half of the dressing mixture for a half hour.

Place the Mahi Mahi steaks on the grill, and cook to desired temperature, flipping only once. Brush Mahi Mahi steaks once again after flipping with remaining dressing.

Meal 2: Fish Tacos

Ingredients:

  • Leftover Mahi Mahi , cut into strips
  • 1 T olive oil
  • 1 T Chipotle seasoning
  • 4 soft (but firm) tortillas
  • 1 cup cheddar jack cheese, shredded
  • 1 Diced tomato
  • ¼ head of cabbage, shredded
  • Chipotle mayo (see recipe below)
  • salsa

Heat olive oil in frying pan. Sprinkle leftover Mahi Mahi with chipotle seasoning. Cook in oil in pan until warmed through. Layer cheese and mahi in tortilla. Add tomatoes and cabbage. Top with chipotle mayo and salsa as desired.

Chipotle Mayo

Ingredients

  • 1 cup mayonnaise
  • 2 tablespoons canned Chipotle peppers in adobo sauce, seeded
  • 1/4 cup green onion, finely diced
  • 1/4 cup sweet pickle relish

Place the mayonnaise and chipotle peppers into a food processor, and process until well blended. Transfer to a bowl, and stir in the green onion and sweet pickle relish. Chill before serving.
