Ground beef is one of the most versatile meats available. It can be formed into patties for burgers, made into meatballs and meatloaves, stuffed into vegetables or crumbled and added to sauces and gravies. It’s the ideal food for the family on a budget and to bring to potluck or covered dish dinners.
Super Simple Stuffed Peppers
For a quick and delicious but colorful meal, stuffed peppers are a treat for the family.
Ingredients
Cooking spray
4 green bell peppers
1 pound of lean ground beef
1 can of tomato sauce
1/2 cup of seasoned bread crumbs
(Optional) Grated cheese
Directions:
Spray a baking dish with the cooking spray.
Cut the peppers in half lengthwise, remove the tops, and clean the insides.
Place the peppers in the baking dish, cut side up.
In a medium bowl, mix the ground beef with 1/2 of the tomato sauce.
Scoop the ground beef mixture into the pepper halves.
Pour the remaining tomato sauce over the peppers.
Bake in a 350 degree oven for approximately 20 minutes.
Remove from the oven and sprinkle the peppers with the bread crumbs and cheese.
Return to the oven for approximately 10 to 15 minutes.
Serve with rice.
Beef Enchilada Casserole
Bring this beef enchilada casserole to a church potluck and watch it disappear.
Ingredients
Cooking spray
1/1/2 pound of ground beef
1/2 cup of chopped green chili peppers
1 large can of red enchilada sauce
1 medium onion, chopped
1 can of condensed cream of chicken soup
10 large tortillas
2 cups of grated cheddar cheese
Directions:
Spray the casserole dish with cooking spray.
Brown the ground beef and drain.
Mix the ground beef with the chili peppers and enchilada sauce. Simmer
Place the tortillas in a single layer in the oven and heat until crisp.
Lay the 5 of the tortillas in the bottom of the casserole dish.
Scoop 1/2 of the meat sauce over the tortillas.
Top with 1/2 of the onions and one cup of cheese.
Place the rest of the tortillas over the cheese and onions.
Scoop the rest of the meat sauce over the tortillas.
Pour the cream of chicken soup over the sauce
Sprinkle the rest of the onions and cheese over the soup.
Bake in 350 degree oven for approximately 45 minutes.
Hamburger Quiche for Real Men
Bring this to the family dinner table and see how quickly “real men” eat quiche.
Ingredients
1 deep dish pie crust
1-1/2 pounds of ground beef
1/2 cup of mayonnaise
1/2 cup of skim milk
2 large eggs
1 tablespoon of cornstarch
1-1/2 cups of grated cheese (Swiss, cheddar, mozzarella or combination)
1/2 cups of diced onion
1 sliced tomato
1 sliced zucchini
Pepper to taste
Directions:
Brown the meat and drain.
In a large mixing bowl, combine the mayonnaise, milk, eggs and cornstarch until smooth and creamy.
Add the ground beef and onions and stir.
Add pepper to taste.
Pour this into the pie crust and top with sliced tomato and zucchini.
Place the quiche on a baking pan.
Bake in a 350 degree oven for approximately 40 to 45 minutes.
