Hearty Sausage and Corn Chowder is an easy to prepare and filling main dish.

With the coming of cooler days and nights, many menu planners turn to soups as featured main dishes. Busy family schedules in the midst of fall sports and other school activities beg for easy preparation of filling meals. Hearty Sausage and Corn Chowder is a warm, satisfying dish and very easy to prepare.

Hearty Sausage and Corn Chowder combines the flavors of spicy hot Italian sausage with the crispness of whole kernel corn. Those flavors are balanced with potatoes and a creamy broth.

The recipe for Hearty Sausage and Corn Chowder is very easy to adapt for those who prefer less spice in their meals. Substitute mild sausage and reduce the amount of ground black pepper. To boost the dietary fiber and vitamin content, do not peel the potatoes but rather scrub them to remove any remaining dirt. It is also very easy to substitute 1.5 cups of home-canned or frozen whole kernel corn in place of the commercially canned whole kernel corn.

Hearty Sausage and Corn Chowder

Ingredients:

  • 1 pound fresh ground hot Italian sausage
  • 1 medium sweet onion
  • 5-6 medium all-purpose potatoes
  • 1 12-ounce can low-sodium whole kernel corn (do not drain)
  • water
  • 1 ½ teaspoons sea salt (or to taste)
  • 2 teaspoons ground black pepper
  • 1 15-ounce can evaporated milk

Preparation:

  1. Peel the sweet onion
  2. Slice the onion in half crosswise, and then slice into ¼ inch slices
  3. Scrub the all purpose potatoes under running water. Do not peel the potatoes
  4. Cut the potatoes in half lengthwise
  5. Dice the potatoes into ¾ inch pieces

Cooking Directions:

  1. In a heavy skillet, brown the sausage and onions just until sausage is cooked through, but not crispy. Break up the sausage while cooking. Drain excess fat.
  2. In a large, heavy-bottomed saucepan, combine potatoes, corn and salt. Add enough water to barely cover the potatoes. Bring to a boil, reduce heat to simmer, and stir occasionally until potatoes are tender, approximately 12-15 minutes.
  3. Add sausage/onion mixture, black pepper and evaporated milk to potatoes. Stirring occasionally, simmer over very low heat for 30 minutes to allow flavors to meld.

Ladle into soup bowls and serve with a leafy green salad and crusty rolls. Hearty Sausage and Corn Chowder is certain to become a family favorite. This Hearty Sausage and Corn Chowder will serve four.
