Homemade Chicken Soup with Buttermilk Biscuits

Want chicken soup just like mom used to make? Try this recipe. Fresh herbs along with thick egg noodles add flavor and texture to this ultimate comfort food.

Homemade chicken soup is the perfect thing to make on a cold winter night, or a comforting meal to serve to someone who is feeling under the weather. In this version, fresh herbs simmer in the broth for over 2 hours allowing them to release their flavors, resulting in a savory soup. This recipe makes approximately 6-8 servings.

Homemade Chicken Soup

Ingredients:

  • 1 large onion, chopped
  • 2 large carrots, sliced into rounds
  • 2 celery stalks, sliced
  • 3 lbs chicken breast, with skin
  • 2 black peppercorns
  • 1 bay leaf
  • 3 sprigs fresh parsley
  • 3 sprigs fresh thyme
  • 1 tbsp vegetable oil
  • 1 quart chicken stock
  • 1 quart water
  • 1 1/2 cups wide egg noodles
  • salt & pepper to taste

Directions:

  1. In a large stockpot, heat the vegetable oil over medium-low heat.
  2. Place onions, celery and carrots in the stockpot and cook for 10 minutes stirring frequently.
  3. Place the chicken breast into the stockpot .
  4. Pour the chicken stock and water over the chicken.
  5. Raise heat to high and bring to a boil.
  6. Remove any fat that rises to the surface of the soup.
  7. Place the bay leaf, peppercorns, thyme and parsley into the pot.
  8. Cook soup for 2 hours over low heat.
  9. Using tongs, remove chicken from the soup and set in a bowl to cool.
  10. Once cool, remove the skin and bones from chicken.
  11. Chop the chicken meat into small pieces, then stir them back into the soup.
  12. Remove the bay leaf and discard.
  13. Add the egg noodles and cook for 12 minutes.
  14. Add salt & pepper to taste.

The perfect accompaniment to a steaming bowl of homemade chicken soup are buttermilk biscuits that melt in your mouth. Serve these airy biscuits alongside the soup, and enjoy the leftover biscuits for breakfast with jam. This recipe makes approximately 8 biscuits, double the recipe to increase the size of the batch.

Homemade Buttermilk Biscuits

Ingredients:

  • 1 1/4 cup flour
  • 3/4 tbsp baking powder
  • 1 1/2 tbsp sugar
  • pinch of salt
  • 1/4 cup softened unsalted butter
  • 1/2 cup buttermilk

Directions:

  1. Preheat oven to 350 degrees.
  2. Lightly grease a muffin pan with butter and flour, or coat with nonstick cooking spray.
  3. In a large mixing bowl, combine flour, baking powder, salt & sugar and mix together well.
  4. Stir in softened butter and buttermilk until combined. Avoid overmixing the dough.
  5. Fill lightly greased muffin pan about 2/3 full with dough.
  6. Bake at 350 degrees for approximately 30 minutes.

These biscuits can be enjoyed plain or with butter and jam. Apple butter, honey butter or cinnamon butter are also good choices to spread on these rolls. For cinnamon butter simply take 1/4 cup of softened unsalted butter and beat 1/2 tbsp cinnamon and a pinch of sugar with a hand mixer until well combined.

The versatility of these biscuits can't be beat. Eat them at breakfast, lunch or dinner, there's a place for them in just about any meal.
