Turkey breast is an inexpensive and healthy food so make it a regular part of your diet.
Cooking a turkey seems an overwhelming prospect for some people. As a result, turkey is relegated to Thanksgivings and special meals where a designated “family” chef who seems to know more about food than everyone else, fixes the turkey. However, people who do not make turkey a regular part of their diet miss out. In addition, the leftovers can be turned into more delicious meals. Perhaps the greatest benefit of cooking a turkey breast in the slow cooker is that it allows you to plan a meal at the beginning of a busy day and be assured of a delicious filling meal for your family in the evening.
Ingredients
- 4-6 pound turkey breast
- 1-2 cups white wine or Marsala
- ½ cup of butter
- 1 tbsp herb mix (bouquet garni or herbes de province are a good choice)
- Pepper to taste
- 1 tsp salt
- 1 onion.
Instructions
- Coarsely chop the onion. Place most of it on the bottom of the slow cooker. Reserve a handful to stuff inside the turkey breast.
- Unwrap the turkey breast. Remove any extras that are packed inside the cavity (often manufactures will package the giblets and neck in the cavity or they will put a packet of gravy inside the turkey). If the turkey has skin on it and you wish your turkey breast to be skinless, remove the skin with a poultry shears.
- Place the turkey, breast side down inside the slow cooker. Shove the remaining onion inside the breast cavity.
- Melt the butter. Stir the herb mix, pepper, and salt into the butter.
- Pour the mixture all over the turkey (pour some inside the breast cavity too).
- Pour wine over the top of the turkey.
- Cover and cook on low for 7-9 hours or on high for 4-6. Use a meat thermometer to check the temperature. The meat will be safe to eat if the thermometer reads at least 170º F or 77º C.
- When the turkey breast is complete, remove it from the slow cooker and let it rest for twenty minutes. Carve and serve. You will discover that turkey cooked in the slow cooker is moist and tender.
Ideas and Suggestions
- After the meal, remove the remaining meat from the bone and save for delicious leftovers such as sandwiches, casseroles, or soups.
- Serve with baked potatoes baked in another slow cooker. Clean the potatoes thoroughly. Poke two or three holes on each side. Wrap in foil. Place in slow cooker. Turn slow cooker on high and bake for 2.5-5 hours. The more potatoes you prepare, the longer they will need to bake in the slow cooker.
