This corn casserole adds green chilies for a Mexican kick to the corn side dish. Families will love that it is a quick meal to make and a kid friendly meal.

Casserole recipes can be quick and easy to make, perfect for busy families. Often a mix of vegetables and sometimes meat, casseroles most commonly bind together a mix of ingredients with a savory sauce. The trick to this casserole recipe is that is leverages the texture of creamed corn to provide rich sauce which is given structure by the eggs and corn meal.

Stocking a pantry with plenty of canned goods means that a casserole meal is never far from reach. Utilizing canned creamed corn and green chilies, this recipe can be whipped together in under 10 minutes. If necessary, it can be placed int the refrigerator and removed when ready to bake. As with any casserole, reheated leftovers make for a delicious snack.

Kid Friendly Meal & Easy Side Dish

Kids can be picky about strong flavors or strange textures. This easy side dish is one that both kids and adults can appreciate. While creamed corn may not be a kid's idea of delicious food, by combining it with cheese and green chilies creamed corn is elevated into a tasty Mexican meal.

Although a vegetarian casserole, it can be altered to suite each family's taste. The casserole can be given an added boost by including a layer of ground beef seasoned with a packet of taco seasoning. Or, to add more vegetables, a layer of green peas or sauteed onions would work well too.

Mexican Corn Casserole

Serves 6-8

Ingredients:

  • 2 cans creamed corn
  • 1 teaspoon garlic salt
  • 2 eggs
  • 1/3 cup vegetable oil
  • 3/4 cup corn meal
  • 2 cans green chilies, chopped
  • 2 cups grated cheddar cheese

Directions:

  1. Preheat oven to a temperature of 350F (170C)
  2. In a large bowl, add the creamed corn, garlic salt, eggs, vegetable oil and corn meal. Stir to blend all of the ingredients together.
  3. Place half of the corn mixture in the bottom of a 9 x 13 inch baking dish.
  4. Sprinkle half of the cheese over the baking dish, followed by half of the chopped green chilies.
  5. Pour remaining corn mixture into the baking dish, then sprinkle with remaining cheese and green chilies.
  6. Place baking dish into the preheated oven and bake for about 1 hour or until set and bubbly.

Whether it is a busy week of soccer practices or a long night at work, this Mexican corn casserole makes for a hearty and delicious dinner. The cheese and green chilies bring life to ordinary cans of creamed corn making it a savory casserole that both kids and adults will enjoy.
