Tex-Mex Chicken and Lime Chicken Tacos

Get two great chicken recipes for your Crock-Pot with delicious Mexican flavors.

Slow cooker meals are a busy chef's best friend. You can prepare the food when you have time and set the slow cooker to have the food waiting when you are ready to eat. The following are two Mexican-style chicken recipes that are easy to toss into the slow cooker and come out tasting moist and flavorful.

Tex-Mex Chicken

Ingredients:

Procedure:

  1. Toss chicken with the flour and seasoning mix and then place the chicken in the bottom of the slow cooker.
  2. Mix in the peppers, corn, and salsa. Cover the slow cooker with a lid and set on low for 6 to 8 hours or on high for 3 to 4 hours.
  3. Stir Tex-Mex Chicken just before serving. Top with Mexican-style shredded cheese.

To Serve:

You can serve Tex-Mex Chicken on a bed of white rice, couscous, or quinoa. For a spicier entree, try serving it over Spanish rice. You can also use the chicken to stuff a taco shell or burrito. Top with a litte cilantro or chopped green onions for even more kick.

Lime Chicken Tacos

Ingredients:

Procedure:

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. In a small bowl, stir together the lime juice and chili powder. Pour the mixture over the top of each chicken breast. Cover the slow cooker with a lid and set the slow cooker on low for 5 to 6 hours or until the chicken is tender.
  3. Next, remove the chicken from the slow cooker and place on a plate.
  4. Drain the slow cooker of any leftover juices.
  5. Shred the chicken and return it to the slow cooker.
  6. Stir in the corn and salsa. Cover the slow cooker again and let the corn and salsa heat for about 30 minutes or until it is warmed through.
  7. Occasional stirring may be required.

To Serve:

Serve the lime chicken in taco shells or wrap them in flour tortillas. Top with the taco fixings of your choice. Spanish rice makes a great accompaniment with Lime Chicken Tacos.
