If you're a Kitchen Klutz, fear not that special dinner for eight you are obligated to prepare for guests. Here is a recipe which translates into nothing but sheer pleasure for the palate via a marital union of garlic and olive oil, stewed tomatoes and spices. Italian sausage mingling obscenely with meatballs and parmesan. An edible event so lustful, it might as well be rated X. And yet, it’s none other than a good ol’ spaghetti dinner.

But not just spaghetti. This dish contains the best parts of six different recipes combined into one. A recipe handed down from one Kitchen Klutz to another; i.e. cooks who considered themselves just as untalented in the kitchen. A recipe that is a true work of art because it is so fail safe. Even a real newbie in the kitchen can’t foul this one up!

This recipe serves at least eight very hungry guests at your dinner table. When they rave about how good the meal you prepared for them was, it’s mandatory that you shrug and smile, “Oh, heck, I cook like this all the time!”

Kitchen Klutz Super Spaghetti Dinner

1 cup onion chopped small

1 large green pepper, chopped into small pieces

2 cloves garlic, minced

3 tablespoons extra virgin olive oil

1 pound Italian sausage (mild or spicy), sliced into ½ inch pieces, sautéed and drained

1 small container fresh mushrooms, washed and sliced (optional)

2 1 lb cans (4 cups) tomatoes cut up

1 12 oz can tomato paste

1 29-ounce can tomato puree

1 can commercial spaghetti sauce (Hunts, Del Monte, etc)

2 cups water

1 teaspoon sugar

1 ½ teaspoons of salt

½ teaspoon pepper

2 tablespoons dried oregano

1 tablespoon of basil

2 bay leaves

1 tablespoon lemon juice

Cook onion, green pepper, and garlic in oil until tender, but not brown. Stir in remaining ingredients. Simmer, covered, 1 hour (prepare meatballs at this time).

Kitchen Klutz Italian Meatballs

Soak 4 bread slices in ½ cup water for 2 minutes; add 2 eggs and mix well. Mix with 1 pound ground beef, ¼ cup grated Parmesan cheese, 2 tablespoons parsley, 1 teaspoon salt, ¼ teaspoon dried oregano and dash of pepper. Spray large cookie sheet (with sides) with cooking oil spray.

Form meat mixture into small balls (about 24). Bake in 350-degree oven for 25 minutes.

Add meatballs to sauce; simmer sauce with meatballs, covered, for an additional hour, stirring occasionally.

Serve sauce over cooked spaghetti or angel hair pasta. Pass parmesan cheese, a large tossed salad drizzled with Italian dressing, a loaf or two of garlic bread warmed in the oven. Offer spumoni ice cream for dessert.
