Pasta With Asparagus and Mushrooms

This recipe, made with asparagus and mushrooms adds just the right amount of flavor for a great tasting pasta dish.

When it comes to making pasta dishes, the options are endless. Pasta is the one food that can be made with just about any ingredient out there. The key to making great tasting pasta dishes is to mix the right type of ingredients together to make a perfect blend that will make you wanting more. Best part of this recipe is that it only takes a few ingredients and steps to make a perfect meal. This simple dish will instantly become a dinner favorite.

Ingredients:

  • 1 bunch of green asparagus (chopped)
  • 8 oz. package of fresh, white button mushrooms (sliced thinly)
  • 1 medium sized red onion (chopped finely)
  • 3 cloves of garlic (minced)
  • Half package of bacon (chopped)
  • 1 cup of extra virgin olive oil
  • Salt and Pepper (for taste)

* Mushrooms can be replaced with any other type of mushroom

Directions:

  1. In a non-stick pan, pour olive oil and turn heat on to medium-high. Place chopped onion, garlic, and bacon and saute for 5 minutes. Be sure not to burn ingredients. If heat on your stove seems high, lower heat.
  2. Add mushrooms, asparagus, salt and pepper. Cook over medium-high heat for 20 minutes. Be sure not to overcook vegetables. The veggies in this particular dish taste best if they have a bit of a crunch to it.
  3. Pour ingredients over Penne or Rigatoni. These short, yet substantial cuts of pasta work best for this dish. Alternatively, you can put whichever pasta you prefer or have on hand.
  4. Garnish dish with parmesan cheese, and enjoy!

Optional Additions:

If you prefer pasta dishes that have more of a sauce consistency to it, you can add either a light cream, light cream cheese, or fresh ripe chopped tomatoes for additional flavor. Keep in mind that if you try any of these options, you are changing the overall flavor of the dish because you are adding additional ingredients. It will taste great with any of these options, however the recipe above as is, is a very simplistic, yet delicious way to enjoy it. To maximize your dinner choices, try this dish in all of these various ways on different nights.

The very minimal, yet great vegetables in this recipe, make the perfect pasta dish. It's simple to make and can be cooked in the amount of time it takes you to boil and cook your pasta. Using asparagus as one of its main ingredients, a vegetable high in iron, this dish is also a healthy alternative to many other pasta dishes. Make it an even healthier dish by using whole wheat pasta instead of white.
