Penne with Prawns and Chorizo

A Rich and Tasty Pasta Dish

Penne with prawns and chorizo, Liz Gregory 24/01/08

This dish combines the classic flavours of prawns, chorizo, cream and tomato.

Serves 2-3, or 4 as a starter

Ingredients

Method

  1. Pour the vegetable oil into a large frying pan - this needs to be large enough to hold all the ingredients later. Finely chop the onion, add to the pan and fry gently for a few minutes until the onion is starting to soften - don't let it brown.
  2. Slice the chorizo into coin sized pieces and then chop each slice into small cubes. Add to the pan with the onions and fry for a couple of minutes so that the chorizo starts to release its oils.
  3. Now sprinkle the sugar over the onions and chorizo, and pour the balsamic vinegar into the pan. Stir everything around and add the tomato puree.
  4. Add the tin of tomatoes to the pan and turn up the heat for a moment. Then turn down the heat and allow to simmer. Add black pepper to taste.
  5. Put your pasta on to cook according to the pack instructions - this should be 10-12 minutes in a large pan of boiling water. Penne works well with this chunky sauce but you could use whatever you prefer.
  6. Cut the broccoli into florets and then cut these down again so that you are left with quite small pieces. Add these to the pan containing the tomato sauce and give everything a good stir.
  7. When the pasta has a couple of minutes left to cook, add the prawns to the tomato pan and check the seasoning. Now add the cream and turn the heat down low.
  8. Drain the pasta well in hot water and add to the pan containing all the other ingredients and stir everything round so that each piece of pasta is coated with the sauce.
  9. Serve immediately - this is a complete meal in itself, but you could serve with salad and bread if you want to make it stretch a little further.
