Pork Tenderloin with Potato Dumplings

A Delicious and Healthy Meal Made with Pierogi or Gnocchi

This quick recipe uses thin-sliced pork tenderloin, fresh green beans, and your choice of potato gnocchi or potato-filled pierogi.

Try the gnocchi one month and the pierogi the next month to see which you like best.

Pork Tenderloin and Potato Dumpling Ingredients

  • 16-ounce package of frozen potato-filled pierogi or potato gnocchi
  • 12 ounces of fresh green beans, ends trimmed
  • 1 pound of pork tenderloin
  • 1/2 cup of Ken's Balsamic and Basil Vinaigrette (or similar flavored salad dressing)
  • Salt and pepper

Directions

  1. Fill a large pot with water. Add a teaspoon of salt. Bring it to a boil, and add the potato dumplings and green beans. Cook as long as the package directions suggest.
  2. Meanwhile, slice pork into 1/2 to 1/4 inch thin medallions. Sprinkle with salt and pepper. In a large pan, pour the 1/2 cup of balsamic and basil vinaigrette. Heat over medium-high and then add the pork medallions. Turn medallions when the first side is cooked and then cook the other side until no pink is visible.
  3. When potato dumplings and green beans are done, drain them and add them to the cooked pork tenderloin in the pan. Toss all ingredients together, covering them in remaining sauce in the pan.

Variations

Experiment with the dumplings. You can try potato-and-onion filled pierogi, cheese gnocchis, or other types of pierogi. If you can't find pierogi or gnocchi at the store, try using a spinach or cheese-filled frozen ravioli. If none of these are available, then buy red potatoes. Brush them clean, slice them thin, and boil them for 10 minutes with the beans. They should then be soft enough to add to the pork tenderloin skillet.

Beef tenderloin could also be substituted for the pork and wax beans for the green beans. If you really love this recipe, try it with different combinations of the above and then different salad dressings for the sauce. Some other options to try would be an Italian vinaigrette, red wine vinaigrette, Russian dressing, or a honey dijon dressing.

What to Serve with Pork Tenderloin and Potato Dumplings

Pork Tenderloin and Potato Dumplings can be a meal in itself. Side dishes that would be appropriate for this meal include a salad of field greens with raspberries, buttery dinner rolls, or a cottage cheese and pineapple dish.

While pork is still considered a red meat, and red meats are generally paired with red wines, pork has assumed the nickname of "the Other White Meat". This would lead some to choose a white wine to serve with this dish. As a happy medium between these two, try one of the many rose wines on the market. And when serving this meal as part of a celebration or special occasion, try a sparkling shiraz, which provides both the zip of a champagne but the flavor of a red wine.
