Simple Recipe for a Hearty Low-Fat Meal

This recipe makes a meal in itself, while pumpkin puts a savory twist on a family favorite.

Few dishes are more comforting on a crisp fall day than a big hearty bowl of chili. When a cool breeze finds us bundling up in cozy sweaters and leisurely rustling through colorful leaves; there's nothing like thoughts of a home-cooked meal waiting to warm you when the frolicking is through. Made with a few inexpensive key ingredients, like rich, flavorful pumpkin and good for you ground turkey, this quick and easy chili is perfect to share with family and friends and tasty enough to serve on special occasions.

Pumpkin and Ground Turkey Chili

Ingredients:

  • 1 lb ground turkey
  • 1 small onion, diced
  • 1 green pepper, diced
  • 1 clove garlic, crushed
  • 1 14.5oz can diced tomatoes
  • 1/2 can 8oz pure pumpkin
  • 1 15oz can dark red kidney beans
  • 1 8oz can tomato sauce
  • 1 Tb chili powder
  • 1 tsp cayenne pepper hot sauce
  • shredded cheddar cheese
  • light sour cream

Directions:

  1. Sauté the onion, green pepper, and garlic in a large skillet or stockpot. Stir in the turkey and cook until browned.
  2. Mix in the tomatoes, pumpkin and tomato sauce. Gently stir in the kidney beans.
  3. Season with chili powder and hot sauce; bring to a boil. Reduce heat; cover and simmer for 1 hour.
  4. Serve topped with a sprinkling of cheddar cheese and a dollop of sour cream.

Makes 4 very generous servings.

This chili also serves up well with a warm square of cornbread or a side of tortilla chips for dipping; just make sure you have sturdy ones like blue corn tortillas, this is one hearty chili. For a make-ahead-meal transfer your chili to a slow cooker, set on low, and just try to forget about it until dinnertime. Store leftovers, if any, in an airtight container and treat yourself to a next day luncheon or a quick and filling nighttime snack. If you are so inclined to cook meals in advance, this chili is freezer friendly; it warms up wonderfully while maintaining texture and flavor.
