Curry and tuna are two ingredients in this recipe that have been shown to have health benefits that can help protect you against arthritis, heart disease and Alzheimer's.

For years, researchers have touted the health benefits of curry spice and tuna. Now here’s a recipe that’s not only delicious, but it might also help you battle ailments like rheumatoid arthritis, Alzheimer’s Disease, cancer and cardiovascular disease.

Before we get to this quick healthy recipe, let’s learn about the main ingredients that can help you prevent or lessen the symptoms of serious medical problems.

Albacore Tuna

According to the American Heart Association, Omega-3 fatty acids, which are found in fatty fish, benefit the heart of healthy people. Omega-3 also helps folks who are at high risk of, or who have, cardiovascular disease.

The AHA recommends eating fatty fish such as albacore tuna, salmon and herring at least two times a week According to the Heart Association, fish is a good source of protein and doesn’t have the high saturated fat found in fatty meat products.

Fatty fish like mackerel, lake trout, herring, sardines, albacore tuna and salmon are high in two kinds of Omega-3 fatty acids, eicosapentaenoic acid (EPA)anddocosahexaenoic acid (DHA). People with documented coronary heart disease are urged to eat about one gram of EPA and DHA every day.

Curry

Studies, including one published in the November 2006 issue of the journal Arthritis & Rheumatism, show encouraging signs that curry can help relieve or prevent rheumatoid arthritis.

The research indicates turmeric, an element in curry spice, almost completely prevented joint swelling in rats with arthritis. Additional studies have shown that curry could protect against illnesses such as cardiovascular disease, cancer and Alzheimer's Disease.

Quick Healthy Tuna Curry Ingredients

  • 1/3 cup chopped onion
  • ¼ cup chopped green bell pepper
  • 1 clove garlic, minced
  • 2 tablespoons butter or butter substitute
  • 1 cup sour cream (substitute low fat variety if you wish)
  • One 6.5 ounce can or package of albacore tuna, drained and broken into bite size pieces
  • 1 – 2 teaspoons curry powder
  • salt and pepper to taste (a low sodium salt substitute can be used if desired)
  • 2 cups uncooked rice

Preparation

  1. In large saucepan, melt butter or butter substitute
  2. Cook chopped onion, pepper and garlic in butter until tender, but not brown
  3. Stir in sour cream, curry powder, salt and pepper
  4. Add albacore tuna
  5. Heat slowly, stirring often, don’t bring to boil
  6. While heating the tuna curry mixture, prepare the rice

Serving Suggestions

Serve over hot rice and enjoy the taste and health benefits. This recipe is supposed to serve 4, but it’s so delicious that you might want to double or triple the ingredients to serve leftovers, which often taste better after a day or so. In addition, it’s an easy way to get the American Heart Association’s suggestion of eating fatty fish twice a week.
