Rockfish Recipes from Resort Hotels in Bermuda

Baked Marinated Fillets, Fish Princess, and Baked Bermuda Fish

These delicious fish entrees have been served at Castle Harbour Hotel, the Newport Room in the Fairmont Southampton Hotel and the Whaler Inn, also at the Fairmont.

Rockfish, also known as Striped Bass, is a healthy and tasty treat. The sweet and meaty filets are a scrumptious addition to any seafood dinner. Here are three recipes that have been adapted from some of the finest resort hotels on the tropical island of Bermuda.

Baked Marinated Fillets of Rockfish (Castle Harbour Hotel)

Ingredients:

  • 4 rockfish (about 1 pound each)
  • 12 tablespoons oil
  • Juice of four lemons
  • 5 grains of saffron
  • 1/2 teaspoon pepper
  • 2 tablespoons chopped chives
  • Salt and pepper
  • 2 medium onions
  • 4 medium tomatoes
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped thyme
  • 2 tablespoons chopped bay leaves

Directions:

  1. Clean, wash and dry the fish
  2. Mix oil, lemon juice, saffron, pepper, chives and salt
  3. Marinate fish in oil mixture for six hours
  4. Peel and slice onions and tomatoes, place in bottom of buttered casserole dish
  5. Place fish filets in dish and sprinkle with chopped herbs
  6. Bake at 400F for thirty minutes

Serve with salad and potatoes. Serves four to six.

Bermuda Fish Princess (Newport Room at Fairmont Southampton)

Ingredients:

  • 1 rockfish (about 4 pounds)
  • Olive oil
  • Chopped garlic, oregano and dill
  • 3 cups thickly creamed spinach
  • 2 cups dry white wine (Chablis)
  • 1 lemon
  • Sea salt and freshly ground black pepper
  • 1¼ cups butter
  • 2 teaspoons chopped parsley

Directions:

  1. Filet the fish into two boneless, skinless pieces
  2. Place one filet into a lightly oiled baking dish and sprinkle half the seasonings onto it
  3. Cover with spinach
  4. Place the other filet on top of the first and sprinkle the rest of the seasonings
  5. Add olive oil, salt and pepper
  6. Pour wine around the filets and squeeze the juice of the lemon over the whole dish
  7. Bake at 450F for fifteen to twenty minutes
  8. Strain the broth from the dish into another pan
  9. Bring to a boil and reduce broth to two cups
  10. Add butter and stir until softened, then add chopped parsley

Serve the sauce separately. Serves four to six.

Baked Bermuda Rockfish (Whaler Inn)

Ingredients:

  • 1 six-pound Bermuda rockfish
  • 4 tablespoons Worcester sauce
  • 3 ounces bacon, diced
  • 4 minced shallots
  • 6 ounces chopped spinach
  • 4 bread rolls, cubed
  • 1 cup cream (milk if preferred)
  • 2 eggs, beaten
  • 2 ounces sliced almonds (or walnuts if preferred)
  • 1 cup dry white wine
  • Salt and pepper to taste
  • Chopped basil, sage, parsley and chives

Directions:

  1. Season the inside of the fish with salt, pepper, lemon juice and Worcestershire sauce
  2. For the stuffing, sauté shallots and bacon, add spinach and cook until wilted
  3. Moisten rolls with cream and eggs and add to spinach mixture
  4. Add herbs, nuts and seasonings
  5. Fill the fish with the stuffing and close by drawing filets together
  6. Place fish filets in well-buttered deep oval casserole dish
  7. Pour wine over the filets and bake at 325F for 45 minutes

Decorate finished entrée with parsley and lemon wedges. Serves four.
