Boneless Chicken Breasts Marinated and Cooked on the Barbecue

Here's a recipe for a delicious marinade for grilled meats, poultry and seafood.

Grilled boneless chicken breasts are an easy and delicious dinner on the grill.

They’re versatile, too. Slice them to add to a salad or pasta dish, add toppings or dipping sauces, or just serve them right off the grill as a main dish.

This recipe uses a tried-and-true, all-around marinade. Feel free to use it on other meats and seafood for the grill.

Marinated Grilled Chicken Breasts

  • ½ cup sherry
  • ¾ cup olive oil
  • ½ large onion, grated
  • 3 tablespoons Worcestershire sauce
  • 1 teaspoon fresh lemon juice
  • 3 tablespoons soy sauce
  • 3 tablespoons balsamic vinegar
  • 2 cloves garlic, crushed
  • ½ teaspoon thyme
  • ½ teaspoon oregano
  • ½ teaspoon rosemary
  • ½ teaspoon marjoram leaves
  • 4 boneless chicken breasts

Mix thoroughly sherry, oil, onion, Worcestershire, soy sauce, balsamic vinegar, lemon juice, garlic, thyme, oregano, rosemary and marjoram. Pour mixed sauce over chicken breasts and allow to marinate for at least 1 hour and up to overnight. Place on a preheated 350 degree grill and cook for about 20 minutes, turning occasionally.

Some serving suggestions:

  • Top the chicken with grilled onions, peppers and mushrooms.
  • Serve with dipping sauces such as ranch dressing, honey mustard or chutney.
  • Cut grilled chicken into strips and serve over pasta with reserved marinade heated in a small saucepan and poured over the pasta.
  • Serve chicken slices on a salad of romaine lettuce, sliced cucumbers, artichoke hearts, fresh parmesan shavings, croutons and a balsamic vinaigrette dressing.
  • Cut chicken breasts into 2-inch chunks, marinate and put on skewers for chicken kebabs.
  • Top with homemade tomato salsa, with extra cilantro.
  • As leftovers, this chicken makes an outstanding chicken salad, with mayonnaise, diced celery and chopped onion.

Tips:

  • This marinade can be used for chicken, fish, beef or pork. The general rule is the longer you marinate, the better. However, remember that even the small amount of lemon juice in this marinade is enough citrus to begin cooking fish and seafood.
  • If you marinate chicken breasts in a Ziplock bag or in a covered dish, be sure to turn them occasionally to marinate evenly.
