Ingredients and Preparation for Greek Souvlaki, Potatoes and Salad

International foods are a great way to spice up meal time. Prepare these tasty Greek food recipes for an exciting, change-of-pace dinner.

In the history of Greek Cuisine, the social element of sharing the meal is every bit as important as the food itself. The Greek diet is thought to be one of the healthiest in the world, prepared with low fat ingredients, plenty of vegetables and lots of antioxidant-rich garlic.

These Greek food recipes are highly flavorful because they are prepared with the savory trio of lemon juice, garlic and oregano. These mingling aromas will fill the home and make mouths water. The luscious flavors will awaken the taste buds and bring an element of surprise to the table.

Greek Potatoes

  • 6 medium potatoes, cubed
  • 1/2 cup lemon juice
  • 1/3 cup vegetable or canola oil
  • 1 tbsp olive oil
  • 1 1/2 tsp dried oregano
  • 1/2 tsp black pepper
  • 2 minced or pressed garlic cloves
  • 3 cups hot water

Wash and cube the potatoes, with skins on. Place the potatoes in a deep, flat pan. Add lemon juice, spices, garlic, oils, and toss to coat. Add water. Bake uncovered at 475 degrees for 1 1/2 hours, stirring occasionally. Water should evaporate in the last 30 minutes, until only oil is left. Stir more frequently during this time to prevent browning. Garnish with fresh parsley if desired.

Chicken Souvlaki

  • 6 tbsp lemon juice
  • 4 tsp olive oil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 8 minced or pressed garlic cloves
  • 4 boneless, skinless chicken breasts

Combine all ingredients, except chicken, in a measuring cup and stir. Cube chicken breasts and place in a plastic bag with zipper closure. Pour juice, oil, garlic and spices over chicken, close bag and shake until mixture is evenly distributed around chicken. Marinate in refrigerator for at least 30 minutes. Remove chicken from bag and thread onto bamboo skewers. Cook in a non-stick double-sided grill or on a single sided grill, rotating skewers. Cook approximately 10 minutes or until done. Serve with Tzatziki sauce for dipping.

Greek Salad

  • 1 small head romaine lettuce
  • 2 wedged or cubed tomatoes
  • 1 English cucumber, halved lengthwise and sliced
  • 1/2 red onion, sliced
  • Olives, optional
  • Crumbled feta cheese
  • Greek olive oil dressing

Cut and wash lettuce, place in large bowl. Wash and wedge or cube tomatoes, add to bowl. Wash and slice, or peel and slice cucumber and add to bowl. Repeat with red onion. Add olives if desired. Add Greek dressing to taste, toss salad. Top with feta and serve.

These scrumptious recipes serve four to five people and are well worth the time and effort they take to prepare. Savor the aromas, flavors and take the time to bond with family or friends while enjoying this tasty meal.
