Tasty, Nutritious and Cheap Ways of Cooking Kidney

Once a staple part of a Victorian breakfast side board, kidneys are a cheap and nutritious alternative to more common cuts of meat. Here are some kidney recipe ideas.

Kidneys are a good source of iron and contain similar proteins to liver. Devilled kidneys were once a favourite breakfast dish where essentially the kidneys were fried with mustard, Worcestershire sauce and paprika or cayenne pepper. But there are other dishes that can be made very cheaply using this type of offal. Some of these are given below. Details on how to prepare kidneys for cooking are given in this article.

Kidney Stuffed Onion Recipe

Ingredients (serves 1):

  • 1 large Spanish onion
  • 1 pig’s kidney
  • Knob of butter
  • Salt and pepper

Method:

  1. Prepare the kidney by washing and removing any membrane etc.
  2. Peel the onion and cut it in half
  3. Remove some of the middle of the onion from each half
  4. Put the kidney in the hole of the middle of one of the onion halves
  5. Season with the salt and pepper and add the knob of butter
  6. Join the onion halves so the kidney is encased
  7. Wrap the onion tightly in lightly greased foil to keep it in shape
  8. Pop in the oven on gas mark 4, 180 C, 350 F for half an hour or so until it’s all cooked through
  9. Serve with chips or sautéed potatoes along with carrots and peas

Recipe for Stewed Kidneys in Wine

Ingredients (serves 4):

  • 6 pig’s kidneys
  • 3 level tbsp plain flour
  • 2 oz mushrooms
  • 2 oz butter
  • 1 large onion
  • 2 oz mushrooms
  • ¼ pint red wine
  • ¼ pint beef stock
  • 1 tsp mixed herbs
  • 1 bay leaf
  • 1 tbsp tomato purée
  • Salt and pepper to taste

Method:

  1. Wash and slice the mushrooms
  2. Peel and chop the onion then fry it in the butter until it just starts to brown.
  3. Cut the kidneys into small pieces and add to the onion then cook for about five minutes
  4. Add the flour, stir and cook for a minute then slowly add the stock and wine, stirring all the time
  5. Bring to the boil and allow the sauce to thicken
  6. Add the herbs, bay leaf and tomato purée then season well with the salt and pepper
  7. Add the mushrooms and simmer for about 10 minutes
  8. Remove the bay leaf then serve with mashed potatoes and broccoli

Recipe for Kidneys in Tomato Sauce

Ingredients (serves 4):

  • 1 1b kidneys
  • 1 onion
  • 1 garlic clove
  • 1 oz butter
  • 2 tsp tomato purée
  • 4 largish tomatoes
  • Couple of drops of Worcestershire sauce
  • Salt and pepper

Method:

  1. Halve the kidneys
  2. Peel and chop the onion
  3. Skin and chop the tomatoes
  4. Skin and crush the garlic
  5. Fry the onion and garlic in the butter until the onions begin to soften
  6. Add the kidneys and gently sauté for a couple of minutes, turning once
  7. Mix the purée with a tablespoon of water and add to the pan along with the tomatoes and Worcestershire sauce
  8. Season with the salt and pepper and gently cook for a further 15 minutes
  9. Serve with boiled rice and peas
