Easy and Simple Dishes to Make for Your Next Meal

After Thanksgiving or any big turkey dinner, the leftover meat makes a great staple for some delicious no-effort recipes.

Try one of these four recipes that are made simply with leftover turkey.

Turkey Pot Pie

  • 1 cup cubed cooked turkey
  • 1 can cream of chicken soup
  • 1 package of frozen mixed veggies, thawed, or leftover veggies such as plain corn, sliced carrots, and green beans
  • 1/2 cup milk
  • 1 egg
  • 1 cup Bisquick or similar baking mix

Preheat over to 400 degrees. Mix soup, veggies, and turkey in a 9-inch pie plate. In a separate bowl, mix the milk, egg, and BIsquick. Pour over turkey in pie plate. Bake 30 minutes or until golden brown. Serves four. Can also be made with leftover chicken.

Turkey Cheese Pockets

  • 2 ounces of cream cheese
  • 1 tablespoon mayonaise
  • 1 teaspoon dijon mustard
  • 1/2 to 1 cup of cooked turkey breast, shredded
  • 1/4 cup shredded mozzarella
  • 1 can of refrigerated biscuits (10 count)

Preheat oven to 400 degrees. In a small bowl, mix cream cheese, mayo, and mustard. Add turkey and cheese, mix again. Next, roll out each biscuit into small circles. Place 1 heaping teaspoon of turkey mixture into each circle. Fold dough over to make half-moon shapes. Press edges firmly to seal. Bake on an ungreased baking sheet for 10 to 12 minutes or until lightly browned. Makes 10 pockets.

Creamy Country Turkey and Noodles

  • 2 cans of cream of chicken soup
  • 3/4 cup of mayonaise
  • 1/2 cup milk
  • 3 tablespoons honey
  • 2 tablespoons dijon mustard
  • 1 package (26 ounces) of frozen shredded hash browns
  • 4 cups of cubed cooked turkey
  • 3 cups sliced frozen carrots

In a large bowl, combine the first five ingredients. Stir in hashbrowns, turkey, and carrots. Pour into a greased 13x9-inch pan. Cover with foil and bake at 350 degrees for 45 minutes. Uncover and bake for 15 minutes longer or until bubbly. Can also be made with leftover chicken or ham. Serves 8.

Cheesy Broccoli Rice and Turkey

  • 1 can of chicken broth
  • 2 cups of cooked turkey, cubed
  • 2 cups of broccoli florets
  • 2 cups uncooked Minute Rice
  • 1/2 cup water
  • 6 ounces of Velveeta cheese, cut into chunks

Heat broth, turkey, and broccoli in a large pan. Bring to a boil. Reduce heat to low, cover, and simmer for 5 minutes. Add rice, water, and cheese. Cover. Remove from heat. Let stand 5 minutes until rice is cooked and cheese melted. Stir. Makes 4 servings.

These are just four easy recipes for using up leftover turkey. Other simple ways to use up turkey are to throw it into salads, soups, sandwiches, stir it into a bag of prepared noodles, or chop it and freeze it for a later date.
