Sarah’s Vegan YumYum Stir Fry
Difficulty: easy-medium
Warning: Spicy! Eliminate the sriracha and crushed red pepper flakes to tone down the heat.
Ingredients:
- 4 tablespoons olive oil
- 1 small white onion (diced)
- 4 garlic cloves (finely diced)
- 1 cup zucchini (thinly sliced)
- 2 large carrots (diced)
- 2 cups broccoli heads (bite size)
- 1/2 cup green pepper (diced)
- 1/2 cup red pepper (diced)
- 1 cup soy beans
- 1/2 cup peas
- 1/2 cup green olives (sliced)
- 1/4 cup soy sauce
- 3 tablespoons Sriracha
- 3 tablespoons lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup waterfull
- Pepper
- Salt
Execution:
- In a large frying pan combine the olive oil, diced onion and garlic cloves; caramelize the onions over medium-high heat.
- Reduce heat to medium before adding the zucchini, broccoli and carrots. Add 1/4 cup of water and cover the pan. Allow the vegetables to steam until they can be easily pierced with a fork or all of the water evaporates.
- Sauté cooked broccoli, zucchini and carrots with remaining vegetables and lemon juice over medium-high until peppers become tender. Try to keep all of the ingredients moving around in the pan to ensure even heating and complete coverage.
- Reduce heat to medium-low before incorporating the remaining ingredients and spices. Once all of the ingredients are in the frying pan, turn the heat on high and sauté for approximately three minutes. A small amount of olive oil, lemon juice or water may be added during this process if there isn’t sufficient lubrication.
- Once all of the vegetables have achieved the texture and softness of the chef’s taste the pan should be removed from the heat. Sarah’s Vegan Yum Yum Stir Fry is best served immediately after cooking over a bed of brown or white rice.
